KILLER OIL FREE HUMMUS This recipe is my signature dish.... everyone loves my hummus. That's because when I first tried hummus I thought it tasteless and unworthy but when you experiment you have a fantastic fiber rich condiment that adds so much flavor to any dish it's served with. If you follow these steps it can also be practically or all oil free - up to you. One can of garbanzo/chick peas beans -organic better for you or try one can of black beans instead see below. Drain off all but 1/4 cup of the liquid. Add one heaping tablespoon of CUMIN Add two tablespoons of Lemon or lime juice, or red wine vinegar (lemon juice is best) Add one table spoons of Garlic Salt or just garlic powder if watching sodium intake Add two tablespoons of Sweet Thai Chili Sauce (Mae Ploy brand best) if you don't have this add non fat Italian Dressing or Catalina Dressing instead Now add your flavorings and blend, you will need to go slow in regular blender as it will be a little thick, take your time and stir in between pulses until you have the consistency you like. For those with digestion problems try blending until you see no grainy texture just smoothness. Adjust seasonings to taste.
THREE PEPPERS 1/2 cup Roasted Red Bell Peppers or freshly chopped red bell pepper drained add Chili Pepper Flakes and 1/4 cup Jalapenos or other spicy peppers or to taste ROASTED GARLIC with??? Artichoke Hearts, Black Olives, Sun Dried tomatoes make sure it is roasted otherwise raw garlic is going to have an acidic bit that is not as pleasant and harder to digest, how to roast garlic? cut off the end of the entire garlic cloves - I usually do a bunch at one time so I have it on hand. You can brush with olive oil but not neccessary. Then wrap in aluminum foil and bake in oven - toaster oven saves energy! for about 30 minutes until very soft, squeeze out roasted garlic from bottom to the top of the cloves. Now you can add 1/3 cup of any of the following_ drained artichoke hearts, drained black olives or drained sun dried tomatoes. Blend and enjoy!
Pesto I make my own pesto sauce usually which doesn't have oil in it and tastes better but try and drain off the extra oil of a prepared mix you buy if that makes you feel better. Add 1/3 cup pesto mix to bean mix and blend.
Play around with the flavors, if your hummus comes out too wet or dry adjust the liquid amount of the liquid from the beans not your flavorings. Try making hummus with black bean, navy beans, etc. Or have one can black beans and one can garbanzos/chick peas.... again it's just blended bean paste. Yumm Remember Hummus is a neutral dish so you can spread on pita bread, bagels, eat with chips or slather on your tofu or fish as a condiment. It is full of natural protein and when combined with any whole grain rice they become a complete protein.
